According to John Mariani in The Encyclopedia of American Food and Drink, "gyro" comes from the Greek gyros meaning "turn." He dates the appearance of the term gyro in print to 1970 and suggests that it is even Greek American, possibly created in NYC, although it may have been based on Athens street food.
