It better not be a period recipe. German chocolate cake is supposedly named
after Sam German, who developed the dark chocolate bar for Baker's Chocolate
Co. in 1852. Here's a current incarnation of the original recipe.
Bear
German Chocolate Cake from the Baker's German Sweet Chocolate
wrapper
GERMAN SWEET CHOCOLATE CAKE
1 (4-ounce) package Baker's German Sweet
Chocolate
1/2 cup boiling water
1 cup butter or margarine
2 cups sugar
4 egg yolks
1 teaspoon vanilla
2 1/4 cups sifted all-purpose flour (or 2
1/2 cups sifted cake flour)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
4 egg whites, stiffly beaten
Melt chocolate in boiling water. Set aside
to cool.
Cream butter and sugar until fluffy. Add
egg yolks, one at a time, beating well after
each addition.
Blend in vanilla and chocolate. Sift flour,
soda, and salt; add alternately with
buttermilk to the chocolate mixture, beating
after each addition until smooth. Fold in
beaten egg whites.
Pour into three 9-inch layer pans, lined on
the bottom with waxed paper. Bake at 350
degrees F for 30-35 minutes. Cool. Frost
tops of layers only with Coconut-Pecan
Frosting (recipe follows). (Sides can be
frosted with chocolate butter cream frosting
for a more finished look.)
COCONUT-PECAN FROSTING
1 cup evaporated milk
1 cup sugar
3 slightly beaten egg yolks
1/2 cup butter or margarine
1 teaspoon vanilla
1 1/3 cups Baker's Angel Flake coconut
1 cup chopped pecans
Combine all but the coconut and pecans in a
medium sauce pan. Cook and stir over medium
heat until thickened, about 12 minutes. Add
the coconut and pecans. Cool until thick
enough to spread, beating occasionally.
Makes 2 1/2 cups.
