I was discussing the period proto- baklava that Paul had mentioned in his
last missive with Avraham, and I decided to ask Paul if he had a recipe.
Here 'tis, for any who are interested...

I do have a question, though- what sort of bean paste might this be? Most
beans are New World, other than garbanzos, lentils, favas, and the
"kidneyesque" beans Ras had been discussing. Any clues, anyone?

Yes, its called Gullach, with an umlaut on the up, "flower flour food."

I quote myself:

Mix evenly egg white, bean paste and cream [to make a dough]. Spread out
[dough] and fry into thin pancakes. Use one layer of white powdered sugar,
[ground] pine nuts and [ground] walnuts for each layer of pancake. Make
three-four layers like this. Pour honey dissolved in ghee ["Muslim oil"]
over the top. Eat.

This is early 14th century, from the "third Yuan text" that I am working on,
the Zhujia biyong shilei food sections. As stated, use semolina instead of
bean paste [flour]. The white powdered sugar is actually a pulverized
crystal condensate, not modern sugar. Pulverized dried honey is good too.
Text calls this "sand" sugar.
