Recipe taken from "Everyday Cookery" by Helen Bunny [Coterie Publications]
ISBN 0-9596523-61 c.1979

Measurements are Australian - 1 teaspoon = 5 ml; 1/4 teaspon = 1.25 ml; 1
tablespoon = 20 ml; 1 cup = 250 ml; 1/2 cup = 125 ml
Oven temp - "Slow oven" = 300 Fahrenheit / 150 Celsius

Rich Christmas Cake
ingredients
750g sultanas
250 g raisins
125 g currants
125 g glace cherries
125 g mixed peel
1/2 cup rum, brandy or sherry
250 g butter
1 1/2 cups brown sugar
1 teaspoon grated lemon rind
1 teaspoon grated orange rind
4 eggs
2 tablespoons marmalade
2 1/2 cups plain flour
1 teaspoon mixed spice
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
pinch salt

Method
*Chop all fruit and place in a large bowl. Add Rum (or brandy or sherry).
Cover and allow to stand a few hours or overnight
*Line a deep 23cm round cake tin or 20cm square cake tin with two
thicknesses of paper, bringing paper 5 cm above edge of tin
*Cream butter until soft, add brown sugar and beat until combined.
*Add lemon and orange rind
*Add eggs, one at a time, beating well after each addition. Add marmalade
*Sift dry ingredients together
*Add fruit mixture and dry ingredients alternatively to creamed mixture. Mix
thoroughly
*Place mixture into prepared tin. Bake in a slow over for 3 to 3 1/2 hours
or until a skewer inserted in the middle of cake comes out clean
*Allow to cool in tin
