[Sca-cooks] fruit preserves and marmalades

I've successfully made preserves by cooking equal amounts of fruit and sugar
veeerrryyy sloooowwwlllyyy over low heat.  Eventually you cook enough liquid
off for it to gel.  I've seen 18th century receipts calling for currant
juice/jelly and pippin juice/jelly to set them.  I'm not sure quinces would
have been used for their pectin with other fruit because of the difference
in seasonal availability, though I have seen it in one modern recipe.
