Chapter Twenty-Eight To Make Marzipans

To make marzipan, you take the almonds and scald them, and once they are
peeled wash them. And when they are washed spread them out on a cloth over
a strainer and expose them to the air for three or four days until they are
very dry. And afterwards take them little by little and grind them in a
mortar, and moisten the pestle with a little rose water so that they do not
produce oil, and when they are all ground, for every pound of almonds add a
pound of sugar. And grind and mix it again, and, when it is all ground,
have some sugar wafers ready, put the paste on top of the wafers with a
cross in the middle, in such a way that the wafers are covered. And
afterward take well ground sugar and sprinkle it over the top, and then have
ready some flat stones or roasting pans, very clean and well scrubbed and
put them in, and take them to the fire to cook for a bit.


Speaking of Master Thomas Longshanks, has anyone heard from him lately?
I've sent him a couple of messages and gotten no response.
