This was also a concern I had for the first SCA-Cooks pot luck. I was
camping with Ansteorra by myself and eating in the Food Court. Since I
flew in, I didn't have any cooking equipment.
That year I made some of the pine nut brittle stuff ahead of Pennsic
at home. This was fairly small and lightwieght. My only problem with
this dish was that it kept picking up moisture from the air and sticking
together.
I may well try the "cook at home and bring with me again" thing for
Pennsic this year. The last three years have been rather rushed trying
to squeeze in time between other committments, getting the right cooking
gear in the middle of an encampment with half a dozen cooks all trying to
prepare different dishes for that night's SCA-Cooks event or depending
upon another person to go to an offsite grocery, get the needed items
and return in time to cook them.

I certainly think they should have taken care of the cleanup in that
situation.
