Generally, you have at least a month. Unless the
shells are cracked, or they're infected with something
nasty to begin with, eggs are pretty well self-sealed
packages.

What happens to them as the age is that essentially,
they dry out- in other words, the water in them
becomes replaced by gases- that's why an older egg is
easier to peel when hard-boiled, but may have a large
indentation.

As a rule of thumb, you can check them two ways.
First, put them in cold water- if they float, chances
are you might want to replace them. Secondly, if you
spin them, a healthy egg won't spin very well- the
liquid inside slops and shifts the center of gravity.
If it's been hard-boiled, it will spin wonderfully- a
useful fact to know if you have accidently gotten your
raw and hard-boiled eggs confused (kids "helping" in
the kitchen are good for this ;-).
