Except that my favoured marinade for beef jerky involves soy sauce, red
wine vinegar, fresh crushed ginger, fresh crushed (not ground) black
peppercorn, hot sauce such as tabasco.  No salt, as the soy sauce is quite
salty enough, thank you.

No end of possibilities.
