Actually, i don't know what the folks around Rosine are serving, but...

It can be your basic fried Chinese spring rolls, more commonly called
"egg rolls" in America.

But i usually think of the Philippino version, when i hear "lumpia".

The "pancakes" are fresh and soft.

The various fillings - some nice raw vegetables, some cooked
vegetables, some cooked meats- are already prepared and set out in
bowls in a sort of buffet arrangement. There are also sauces like
fish sauce and garlic sauce and hot chili to season them with.

You select your choice of stuff to put in your "pancake". Then you
roll the pancake up.

AND THEN you take a large green leaf - i usually use Romaine lettuce
if i'm cooking - and wrap the pancake roll up in THAT.

And then you eat it.
