I dun no, since there are no pictures he may have looked aesthetic.  But,
since Balsamic vinegar is (IIRC) mid 1800's it probably wasn't Balsamic rice.

Hmmm, Sushi rice made with Balsamic vinegar using Mediterranean fish....
