Well, as discussed in another thread here, skirrets are a root vegetable.
I've never successfully grown them, but there's a description of them in
_Food and Drink of Medieval Poland_. They have long weedy stems and you
harvest the roots (which I have never heard of being available for sale in
the US) after frost, apparently.
