Hey Olwen...why not try some sort of sugar glaze, where you cook sugar
to a soft crack? stage (it get syrupy but not carmelized), and then dip
the "pickles" in it.  ISTR seeing a couple of recipes for fresh fruit
done this way in a chinese cookbook I got a long time ago.  I'd be more
than willing to look them up for you if you like.....
