Welserin's PEAR MUSTARD!!

IIRC, it is listed under mustard sauce for cod, and so is designed to use
with fish.

People LOVE this stuff, and you can make it in several "strengths" by adding
more or less mustard powder as you choose.  A weak but sweet mustard sauce
with a noticeable pear nose would be really good.

Usually I can't find Pear preserves to save my life so I just puree canned
pear halves and add some sugar, mustard powder, and wine (adjust amounts to
taste). The sauce comes out very blond, and very tasty.
