Based on all the goat I've cooked and eaten, and considering that my father
raises goats for a living... I would venture to say that you get about 45%
of meat compared the the bone-in weight of your chunk of meat.
Also, I've found that goat, unlike sheep, doesn't lend itself all that well
to anything less than medium well done.
