Red Stuff can be anything from mild chili powder to powdered habaneros,
depending on your level of masochism.

Well have to ask rob to get out the meat slicer and pick up some beast, but
I don't have a problem with cranking out a batch. The second recipe is what
we take to pennsic, using mild chili powder.

You got it. Read the recipes, and I'm not sure what
the "Red Stuff" is- cayenne pepper? Margali?
