Besides all the other good information you've gotten from folks on
this list, i add:
Take care and make sure the recipe you're using is actually from
within the SCA period.
The Gode Cookery site has modern recipes and peri-oid recipes, along
with the historical ones.

Additionally, i'd recommend working out your own recipe based on the
original, rather than using an already worked out recipe from the
website. ("worked out", also called, on this e-list, "redaction" -
that is a modern looking recipe with a list of ingredients including
quantities, written in modern English and involving modern
terminology, tools, techniques, etc., as opposed to the usually
rather vague old recipes)
