There are a couple of interesting articles in the current issue of the Bulletin of Primitive Technology (Spring 2002, Issue No. 23, ISSN 1078-4845, http://www.primitive.org ) on using fish skin.

1)One article looks at the ease/difficulty of skinning several kinds of fish:
Ling
Salmon
Dogfish
Wrasse

It only took a few minutes to skin the salmon, but an hour and 45 minutes to skin the dogfish.  They discovered that the wrasse had painful spines down inside its body.
They thought the dogfish might make useful sandpaper.

2)There is a picture of a fish skin raincoat made by students and teachers from Nuiyah School at Sanililuaq community on Belcher Islands, NWT, Canada.

3) There is an article on how to make a fish skin bag.  The example is sort of squat-acorn shaped.
