This is the way we always made it.

1 lb. dried blackeyed peas
1 pigtail or ham hock
6 quarts water
2 tsp. salt

Place all together in a large, heavy pot.  Bring to a boil, and simmer for 3
to 4 hours, until peas are completely done.  Add

 1 large onion, coarsely chopped

and continue to simmer while you make the rice.  Take

2 cups dry rice
4 cups cold water
1 tsp. salt

Place in a pan with a tight fitting lid.  Bring to a rolling boil.  Remove
from heat and cover.  Allow to sit 20 minutes without peeking.

Then mix with peas.  If you like, you can remove the pigtail or ham hock,
remove the meat from the bone, and return the meat to the dish.

New Year's Day meal to ensure Prosperity during the coming year:

Baked Ham topped with brown sugar and mustard and garnished with pineapple
rings and cherries and a lettuce-and-tomato-in-mayo salad
Beef Roast with au jus gravy and smashed potatoes
Hen or Turkey with dressing and giblet gravy
Fish dish (either deep fried fresh water fish, or broiled Sea fish or both)
Collards or Turnips to ensure "Green Money" during the coming year
Hopping John to ensure abundant coins during the coming year.
Green Bean Casserole to ensure a rich life
Squash Casserole to ensure the color of gold
Pumpkin Pies or Sweet Potato Pies to ensure a sweet life
Pecan Pie for the same reason
And of course, potato salad, Corn Bread, and home made yeast rolls to fill
any empty corners left over after such a meager meal.
If you were still hungry, the Aunts brought:
Lane Cake,
German Chocolate Cake,
Red Velvet Cake
Coconut Cake
Pineapple Upside Down Cake
Peach Pie
Apple Pie
Cherry Pie
And
Cream Pie
We had strong, sweet Iced Tea and hot coffee to wash it all down.
Even if you didn't have money in the coming year, you knew you were rich
with the love of Family.
