So called because it was one of the first restaurants with a drive-through
window -- drive in, drive out.
I've lived all over the US, and for my money, In and Out burgers are
hands-down the best anywhere. Why? Because not a darned thing they use is
frozen. If you go inside, you get to watch them taking freshly ground
hamburger out of the fridge, and hand-make the patties. You can see the guy
take a whole potato and run it through the machine that turns it into the
best fries ever, then they pat the fries with a towel after they fry them,
to remove the excess grease. Heads of actual lettuce, not bags of shreds,
are on the counter. Someone is slicing fresh tomatoes, and someone else is
cutting onions and grilling them. I think it must also be a pre-requisite
that employees be smart and cheerful kid-next-door types, because they
always seem to be.
They don't have a huge menu. There is no chicken or fish, no salads. The
only ice cream is in the real shakes. Your choices are simple -- single
burger, double or double-double (2 meat, 2 cheese -- my personal favorite.
Large fries or small ones. Choice of soda or shake. That's the whole menu.
Gets you in and out pretty fast.
I'm far from an In & Out now, and miss them terribly! (But I was raised 50
miles south of Chicago, so I miss White Castles too! The thing about Sliders
(a local moniker for WC's) is that they are steamed, and very small, and
very cheap, so you can eat like 6-10 of them. For normal eaters, one Slider
is one bite. Some are disgusted by them, the rest of us place them on a
pedestal. But if I had unlimited use of White Castle and In & Out
simultaneously, my choice of heart attack would be In & Out.
