I have made the special pie and the stew Jacobin, and they are very
tasty. I substituted pears for the quinces called for in the pie, as I
could not lay hands on them-- however, having eaten quinces, I thought
that a pear matched the taste and more importantly the texture better
than apple. I used small curd cottage cheese for the 'kwark.'
