Well, if you serve one each of something in each course and that one piece
is a single bite, I'd advise you don't leave 15 minutes or more in between
each course.
At the "snack" I spoke of, folks got pretty silly about it at first, then
progressively more irritated as they realized that the format was simply not
going to change.  Everyone went away hungry and grumpy.  And the stupid
thing is, I know for a fact that not everything they prepared was even sent
out~!
