Well, in all fairness, the variables in baking can't be controlled most of
the time. It's almost impossible to control ambient humidity, except in
sealed rooms. Scientists have the luxury of repeatable (for the most part)
experiments because the experiments take place in a controlled environment
(for the most part.)
