One thing to remember is that most large kitchens were designed for MEN
not for women, and men's height - although certainly taller now than in
most earlier periods - has changed less than women's height.  This is a
direct result of nutrition.  Most societies in human history fed boys
better than girls.  This is still true in most third world countries
today, and has only really changed in Europe and the US in the last century.
