I make a variant of a cheesecake from Digby, and freeze it for a few days before a feast with no problems.

I must confess, to my great shame, having never cooked a cheesecake. But I
want to gain some experience in the matter (and probably a few pounds along
the way :-)).
So I've browsed through the Florilegium files for cheesecake and will try a
couple of the recipes for sure over the next weeks. However, I was
wondering, in the meantime, how long can you safely keep a cheesecake in the
fridge? Can they be frozen?
