To keep this semi-on-topic, so far I have cinnamon sticks, dried chilis and
lime leaves. What are some other, good spices available in Chinese and
Indian markets that I could include? I've got a more extensive spice
cabinet then they do, so I'm including taste tested recipes as well.

Here are some "exotic" spices that might work. I'm not sure which can be easily found in the Asian markets. Some may be available from other markets such as Middle Eastern ones or from the web.
galangale-msg (19K) 3/23/01 Period use of the spice galangale.
gums-resins-msg (32K) 8/31/03 Period use of plant gums and resins. Myrrh,
                                       mastic, frankincense, camphor.
(exotic, but not all used in food)
saffron-art (16K) 8/11/97 How to buy and select saffron by Tony Hill.
saffron-msg (53K) 12/21/99 Types of saffron. period uses.
(If you have some, or can get it in time from a good merchant, this should be much better than what they are getting from the grocery. But probably not available in the Asian stores)
vanilla-msg (7K) 4/13/00 The vanilla bean in late-period Europe.
(How about some whole vanilla beans?)

cubebs?
True cinnamon?
Long Pepper or Grains of Paradise?

Folks thinking of herbs as Yule gifts might be interested in some of the uses in this file:
herb-uses-msg (32K) 2/15/00 Uses for various herbs. Recipes.

The files mentioned are all in the PLANTS, HERBS AND SPICES section of the Florilegium. But y'all probably already knew that. :-)

Hmmm. Wonder if there is an herb to keep the cat from scratching the new sofa and loveseat. And no, poisoning the cat is *not* what I had in mind.
