There are a bunch of catering facilities in the US where you can get roast
chickens in whatever quantity you want-- in fact, in many cases, this is
the best option if you are looking to have a local grocery do some of
your catering. Poached trout is rather outre' for the US but it's probably
a European thing.

If it would help, I could discuss some of the recipes I know with my
brother, who works in a PA German Catering company, and see which ones
look the easiest to explain.
