Thank you for your suggestions. I was told that the bear was cut up into steaks, so I will probally marinate and then braise or grill them. I did not know that they carried trichinosis, So I will definitely have to check the internal temp. Thanks Again, I think I am going to like being on this list.  You all seem like a fun bunch!
