I'm not sure how this applies to other animals, but Kosher cuts of
beef are, as far as I can figure, are from the forequarter of the
animal, as opposed to the loin and round, say, which are close to the
sciatic nerve, which is a no-no, for some reason.

There is a way to remove it that is acceptable for Kosher butchering,
but I gather it's difficult and, in the end, sufficiently
time-consuming as to make it not worth the effort under most
circumstances.

In general, body parts which are rich in blood, things like lungs,
are probably the most suspect...
