Hi all -

I'd saved Eirene's message about working with the hotel for the upcoming KWAR
and other hotel experiences, and I wanted to mention a mostly positive one:
I went to a Caid Coronation at a hotel in Bakersfield a year and a half ago
where period recipes had been given to the hotel catering staff.  I don't
know precisely what the process were, what recipes were given, what they
added or what they negotiated - but the results were pretty darned good over
all.  I seem to remember the chickens/game hens had a stuffing that we
commented on as containing non-period stuff, but that's the *major* thing I
remember, which says something.  (I know there were a couple of other things
we commented on or wondered about.)

As an example, they did Macrows - and they were *great*!  At many SCA feasts,
it seems macrows turn out a bit watery, or the cooks don't use enough cheese
- these were *perfect*, in my opinion, properly cooked, and quite impressive.

So while it wasn't the ultimate totally period feast, it was pretty close -
not substituting hotel food for the documentation they were given - and
nothing was underdone or overdone.  All in all, it was a positive experience.
