We do know that slaughtering and butchering in urban areas was done by
specialists (at least for large animals). For example, take a look at the
information on meat bones in _Feeding a City: York_.

_Feeding a City_ suggests that some home butchering was done by smaller
urban households but that it was actively discouraged by the civil
authorities.
