Nu?  Why not a pickle wing?  It's a local specialty, after all, and
each of the ethnic groups who settled here brough their own
versions.

It should be noted that the New York Food Museum is a quasi-
virtual institution.  They have a web presence, and they've
sponsored public exhibits, but they have no actual headquarters or
museum building.
