This is a Scandinavian recipe, and barley flatbread is found at early-period
sites there. Ergot flourishes in northern climates, so wheat and barley were
preferred cereal crops there, though they did grow rye in England. I expect
that rye was used for similar unleavened flatbread on the Continent, where
growing conditions favor rye over other grains.
