That's odd- my camping books say boiling acorns takes the Tannic acid
out and renders them less bitter(more edible)-I don't recall any mention
of potassium, but on the up side you can reduce the boiling water
extract and use it for tanning hides/skins into leather.

The only one I can think of is acorns.  You have to boil them, and then
drink the water, but it has a killer amount of potassium in it, and it
look
like you ate a banana at the wrong time of the day.
