I've used red wine vinegar, white wine vinegar, red and white wine mixed in
various proportions, and cider vinegar. Different flavors, of course, but I
wouldn't rate one better than any other. BUT the *quality* of the vinegar
does make a difference. If the vinegar doesn't taste good, the sekanjabin
won't taste good.
