He's not leaving yet, just interviewing for the job in Tulsa.  However, if
he does get it, consider that the salary is equal to that of the executive
chef at La Fonda, a position currently held by a relatively young man who
has no intention of moving on.  It will also provide financial stability
when Ian's wife, Leah, stops working because of the baby due in June.  Leah
has family in Tulsa and Ian's mother lives in Norman.  Santa Fe is great,
but you are talking about two young people who are still building their
reputations (Leah is a pastry chef) and have their sights set on owning a
bed and breakfast with an adjunct restaurant in a major ski resort.  With
dreams like that, you got to go for the money.  Give it five years, they'll
be back in the Rockies.
