I haven't bought many mushrooms lately because the very wet
winter we had at Cumberland Centre caused a huge crop of
mushrooms in the woods this year.  The oyster mushrooms were
superb and were almost a foot across and absolutely perfect.  Firm
and velvety with great flavour.  I sauteed them in big slices like I
would huge portabellas.  We ate them until we were almost sick.
What luxury.  The shitakes were great too.  Looking forward to
the morels in a month or so.  Asparagus is free if you take hikes
down some of the older (abandoned) raillines in our area.  The
clinkers provise just the right drainage for the roots to get nice and
plump underground before shooting up in the first hot weeks.
