A brewer will tell you not to use baker's yeast in your beer. Bread yeasts
are bred to produce lots of CO2 and not much C2H5OH; wine and beer yeasts
are the other way 'round. Any standard beer yeast will do - and most of the
packets of dried yeast are a standard amount. I like Munton's and Nottingham
yeasts.
