I'm glad you said "Norse style". Old Norse tend to be tough and stringy. :-)
Since the Viking Norse left no recipes, coming up with a documentably period recipe is problematic. However, you can find some conjectual recipes in this file in the FOOD-BY-REGION section of the Florilegium:
