Pizza Crust - Low Carb Comfort Foods Cookbook
2 T cold water
1/4 c hot water
1 T olive oil
1 pkg yeast
1/2 c stoneground whole wheat flour
1/4 c soy protein
2 T whole almond meal
4 T unprocessed wheat bran
salt (1/4 tsp or to taste)
1 T soy protein powder (for rolling)
Preheat oven to 425 degrees. Combine cold water, boiling water, and oil in 1
quart mixing bowl. Add yeast and stir. Wait 5 minutes. Meanwhile, combine all
other ingredients except soy protein reserved for rolling. Add dry mixture to
yeast mixture and stir with fork until moisture is mostly absorbed. Work dough
by hand until smooth. If it's too moist, add 1 tsp soy protein powder. Spread
some soy protein powder on a large cutting board. Roll out the dough very
thin. Fit dough into pan and form a small outer edge. Prick the crust with a
fork. Bake 9-11 minutes or until it begins to darken. Build pizza with desired
ingredients. Bake 10-12 minutes or until bubbly. If edges begin to darken, cover
them with foil to keep from burning.
It's not really bready or anything, but if done right it's crispy and it
holds the toppings just fine Thakyouverymuch <G>.
