[Sca-cooks] Bolognese Hot Chocolate

I don't know if this is the one you're thinking of, but it is a late
period recipe.

Ciccolato Caldo di Bolognese	
   	Bolognese Hot Chocolate
 
 3 3/4" cassia sticks
zest of one orange
pinch of salt
1 c. sugar
8 c. (2 qts.) water
4 oz. unsweetened chocolate (chopped)
1 1/4 lb. bittersweet chocolate (chopped)
1-3 tsp vanilla extract

Combine all but chocolate and extract in a 4 qt pan 
and bring to a simmer. Cover and cook for 5 minutes. 
Turn off heat and leave covered to steep for 15 - 20 minutes.
Strain into an 8 qt pan. Set over medium heat, 
adding chocolate while stirring.
Whisk until just below the boil. 
Then froth by whisking very briskly. Ladle 
into small cups , serve hot.
