Personally, I've never experienced a nasty dry turkey out of mine even
without basting - like I said in my original post, it cooks so fast that
I get no pan drippings for basting or gravy. The first year I didn't
trust that it could be done so fast, and let it go an extra fifteen
minutes - and it was so tender it literally fell apart when I lifted it
out, but it was juicy and delicious. However, you could try my m-i-l's
trick of covering it with a piece of cheesecloth that drapes to the
bottom of the pan. The juices wick up and keep the top nicely moist.
It seems to work well for her, though it leaves an imprint on the top of
the skin.
