Cute and smart, he carefully read my hand-out and regurgitated questions 
based thereon.  Yay!  And in shape too, you saw him at the end of the 
show do all those push-ups.  Very married though;  he hugs a lot but 
those are friend-hugs.  Honest.

I was going for the historical process, even if they wouldn't let me 
dress historical.  If I had a kneading trough, I would have used that; 
 as it was, it was more like Italian home pasta-making than high-tech 
stand mixer machined-food production.  I was really going for the "Low 
Tech" thing here.   Jim O sure got into the swing of things, he wanted 
to try all the techniques for the camera.  Maybe I should have 
remembered to bring aprons... I was a bit stressed out OK?  We took less 
time than they expected since I had the stages done, pre-chilled dough, 
pre-baked finished products, etc. so we wouldn't have to wait around for 
hours.  UNLIKE the professional Pecan Pie Lady, may I point out.
