Just going through back posts, found Caointiarn's request for this recipe.
It is a traditional Catalan recipe, but not, as far as I can tell,
documentable to period. It is incredibly easy and very tasty. The only trick
is remembering to get the spinach out to thaw ahead of time.

Espinacs a la Catalana -- 6 servings

2 10-oz. packages frozen chopped spinach
2 to 3 tablespoons olive oil
1/3 cup pine nuts
1/3 cup raisins soaked in water and then drained, or use "baking" raisins
1/2 teaspoon sea salt

Thaw spinach and bring to room temperature. Drain well, pressing out as much
water as possible.

In a 12" non-stick skillet, heat oil over medium-high heat. Add pine nuts
and cook, stirring constantly, until they just start to turn golden, about 2
minutes. Add raisins and continue to cook until raisins are plump and pine
nuts are lightly browned, about 3 more minutes. Add drained spinach and
salt. Heat through. Serve warm.
