[Sca-cooks] Weird Colored Food -- OP

I have a question for Adamantius, and anyone else who deals with food
turning strange colors --

Kate was making cranberry relish Monday night and decided to see what would
happen if she put it in cookies. The cookies taste great but are this weird
shade of blue-green. Can anyone figure out what might have caused this?

What is in the relish: cranberries, orange peel, orange pulp, sugar, Grand
Marnier.
What is in the cookies, besides the relish: soy margarine, brown and white
sugar, flour, baking soda, salt, orange extract, pecans. (That's right, no
eggs.)

The first batch had chocolate chips instead of pecans. The relish was still
slightly frozen when she added it, and the color wasn't quite as weird.
