Keep "earth convection" in mind too - as Christianna mentioned, a
cold-something (like her washing machine) beneath your food container is
going to help leech the heat away faster. Me, I just put the covered pans
down on the cement floor in my garage... that cement is *cold*! (You might
want to frequently stir whatever-it-is, if possible, to further the cooling
rate.)
