[Sca-cooks] Swineherd's Pie

Well, having started the number one thread on the List last month ;-) I
figure I'll start into what I did with the information last night-
Swineherd's Pie ;-)

Actually, to do it justice, I probably ought to have made it with chicken,
or iguana, or something, but I thought I'd play by the rules of
nomenclature, and name it after the main ingredient I used ;-)

After seeing some of the variants of Shepherd's Pie including pork, it was a
natural. I started by thinking it over, then discussing it a bit with
Adamantius and Margali, and this is what I came up with. Understand, since I
was making two batches, one with hot peppers, one without (Margali doesn't
like them) this was for a double size batch.

4 big Sweet Potatoes, over a lb each, boiled and peeled
1 stick of butter
Black pepper
Golden Mountain soy sauce (also known as Omigawd soy sauce, because of its
wonderful flavor- hey, it was handier than the salt ;-)
1 lb of spicy hot sausage
About as much ham, diced
2 stalks of celery, diced
1 onion, diced
Sm can crushed pineapple, drained
Can of diced tomatoes, drained
Can of creamed corn
2 seeded and diced jalepeno peppers for one half of the batch.

Mashed the Sweet potatoes with butter and pepper and soy sauce, and set
aside.

Browned the sausage, then towards the end added the ham to saute slightly,
then drained it and threw it in the mixing pot.

Used the fat from frying the meat to soften the onion and celery, drained
them and threw them into the pot- poured the remaining fat on the cat food.

Mixed in the pineapple, tomatoes, and creamed corn into the meats and
onion/celery until I had a fairly evenly distributed "stew", being careful
to fold gently, leaving the bits intact, rather than turning the whole thing
to mush.

Placed both in the bottom of baking pans, added the chopped jalepenos to
mine, and covered with the sweet potatoes.

Baked in a 350 oven for about 45 minutes (Note- I'd thrown it into the
fridge until time to cook supper, so if you heat it with residual warmth,
you might only need to heat it about 30 minutes.)

I liked it. I was looking for something mildly sweet and hot, which is why I
used creamed corn (sweet) and seeded ( to mild them down) jalepenos. I also
wanted a bit of acid from the pineapple and tomatoes, and I got pretty well
what I was looking for. Next time, from my POV, I'll use fewer sweet
potatoes- I think there were too many for proper balance (but I like them so
no big deal). Possibly a bit more pineapple, too.

Margali felt that the tomatoes didn't belong in there- I disagree. But, I
might try a batch, later, with cabbage instead of tomatoes- would be an
interesting variant.
