[Sca-cooks] cold green sauce?

i am trying to find a COLD green sauce for cold poached chicken... as 
medieval as possible.   mebbe a garlic/herb emulsion?

luncheon buffet... outdoors... want the 3 sauces (horseradish cream for 
brisket, lombard mustard for sausage, and ----------------- for chicken) to 
reflect kingdom colors: white, gold, green.

heralds and scribes symposium.... trying to be as heralic as all get out. 
breakfast hard boiled eggs will be dyed as well....

any recommendations appreciated.
