Actually, on the orange marmalade (and lemon marmalade as well), I cheat.  I use a preparation from a company called Mamade that includes the oranges and, I'm sure, some other stuff.  I do this because I can't get seville oranges here in Maryland.  All I add to the canned "stuff" is water, sugar and a "knob" of butter.  The preparation is made in England, and I get it from an importer, Penny Ha'Penny (www.pennyhapenny.com).  It's a little on the pricey side, but when you consider the price of seville oranges and and labor involved in cutting up the fruit, it's worth it!  And the marmalade that comes out is wonderful.  The same place also has the Harry Potter chocolate frogs, complete with a collectors' card, and dragon eggs!
