Well, couldn't you blind bake a pie shell and then put in a pre-cooked fruit
filling? And if you wanted to approximate a double crust, put a pre-baked
circle or some fancy shapes on top?

But you know, even good bakery pies tend to have soggy-ish bottom crusts.
